Description
Simple and classic pumpkin muffins with warm spices—easy to make and even easier to love.
Ingredients
1 ¾ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 ½ tsp cinnamon
½ tsp nutmeg
1 cup pumpkin puree
½ cup vegetable oil
2 large eggs
¾ cup brown sugar
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line muffin tin with paper liners.
2. In a bowl, whisk flour, baking soda, salt, and spices.
3. In another bowl, combine pumpkin, oil, eggs, sugar, and vanilla.
4. Add dry ingredients to wet and stir just until combined.
5. Fill muffin cups about ¾ full.
6. Bake for 20–22 minutes until a toothpick inserted comes out clean.
7. Let cool for 5 minutes in pan, then transfer to a rack.

These muffins are great plain, or add raisins, nuts, or a cream cheese swirl for variation.
