Ingredients
1 ¾ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tbsp ground cinnamon
½ tsp ground nutmeg
1 cup canned pumpkin puree
½ cup brown sugar
½ cup granulated sugar
2 large eggs
½ cup vegetable oil
1 tsp vanilla extract
**Cinnamon Sugar Topping:**
¼ cup granulated sugar
1 tsp ground cinnamon
Instructions
1. Preheat oven to 350°F (175°C) and line a muffin tin.
2. In a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In another bowl, whisk pumpkin, sugars, eggs, oil, and vanilla.
4. Combine wet and dry ingredients until just mixed.
5. Divide batter into muffin cups and bake 20–24 minutes.
6. Cool slightly, then dip tops in cinnamon sugar while still warm.
