For the Hot Honey Beef:

1 pound ground beef (80/20 recommended)

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons hot honey (store-bought or homemade)

2 tablespoons soy sauce or coconut aminos

1 tablespoon rice vinegar

Salt and pepper to taste

For the Bowl:

3 cups cooked rice (white, brown, or cauliflower rice)

1 cup shredded carrots

1 cucumber, thinly sliced

1 avocado, sliced

4 green onions, chopped

2 tablespoons sesame seeds

Lime wedges for serving


Instructions

1. Heat olive oil in a large skillet over medium-high heat.

2. Add ground beef, breaking it up with a spatula. Season with salt and pepper. Cook until browned, about 5–7 minutes.

3. Drain excess fat if desired.

4. Add garlic and ginger, cooking for 1 minute until fragrant.

5. Pour in hot honey, soy sauce, and rice vinegar. Stir well to coat the beef.

6. Simmer for 2–3 minutes until the sauce thickens slightly and glazes the beef.

7. To assemble bowls, place rice in the bottom of each bowl.

8. Top with hot honey beef mixture.

9. Arrange carrots, cucumber, and avocado around the beef.

10. Garnish with green onions and sesame seeds.

11. Serve with lime wedges on the side.

Notes

For homemade hot honey, warm 1/2 cup honey with 1–2 teaspoons red pepper flakes.

Substitute any vegetables you have on hand.

For meal prep, store components separately and assemble just before eating.

Swap the beef for ground turkey if preferred.
