Crispy Beef Chimichanga Recipe – Easy Ground Beef and Cheese Mexican Dinner

Filling Ingredients:

  • 1 lb lean ground beef (85/15)

  • 1 medium onion, finely diced

  • 3 cloves garlic, minced

  • 1 green bell pepper, diced

  • 1 tbsp vegetable oil

  • 2 tbsp chili powder

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • 1/2 tsp paprika

  • 1/4 tsp cayenne pepper (adjust to taste)

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 can (14.5 oz) diced tomatoes, drained

  • 2 tbsp tomato paste

  • 1/2 cup beef broth

Assembly:

  • 6 large flour tortillas (10-inch)

  • 2 cups shredded Mexican cheese blend

  • 1/4 cup chopped cilantro

  • Vegetable oil for frying (about 2 cups)


Instructions

  1. Prepare Filling: Cook beef in oil, brown it. Separate for mild portions if needed.

  2. Add Vegetables: Sauté onion, garlic, pepper 3-4 minutes until soft.

  3. Season: Add spices, toast for 30 seconds.

  4. Simmer: Add tomatoes, paste, broth. Simmer 15-20 mins to thicken.

  5. Cool: Let filling cool 5-10 minutes.

  6. Assemble: Spoon 1/3 cup beef, 2 tbsp cheese, sprinkle cilantro onto tortilla.

  7. Fold: Roll tightly. Seal with egg wash if needed.

  8. Fry: Heat oil to 350°F. Fry seam-side down 2-3 mins per side.

  9. Drain & Serve: Remove, drain on paper towels. Serve with toppings.
