Description
This pumpkin bread is warmly spiced and swirled with cinnamon sugar for a sweet, crunchy top and a cozy flavor throughout.
Ingredients
1 ¾ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 ½ tsp cinnamon
¼ tsp nutmeg
½ tsp baking powder
1 cup canned pumpkin puree
2 large eggs
½ cup vegetable oil
¾ cup granulated sugar
½ cup brown sugar
1 tsp vanilla extract
**Cinnamon Sugar Topping:**
¼ cup sugar
1 tsp cinnamon
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a bowl, whisk flour, baking soda, baking powder, salt, and spices.
3. In another bowl, beat pumpkin, eggs, oil, sugars, and vanilla until smooth.
4. Add dry ingredients to wet and stir until just combined.
5. Pour half of the batter into the loaf pan.
6. Sprinkle half the cinnamon sugar over the batter.
7. Add the rest of the batter and top with remaining cinnamon sugar.
8. Bake 55–65 minutes or until a toothpick comes out clean.
9. Cool 15 minutes in the pan, then remove and let cool completely.
Notes
Add a cinnamon swirl inside the batter for extra flavor depth.
