Description
A wholesome pumpkin bread that uses whole wheat flour and less sugar, perfect for a healthy fall snack.
Ingredients
1 ½ cups whole wheat flour
½ cup all-purpose flour
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
½ tsp nutmeg
½ tsp salt
3 large eggs
½ cup maple syrup
1 cup pumpkin puree
⅓ cup unsweetened applesauce
⅓ cup olive oil or melted coconut oil
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. In a bowl, whisk together flours, baking soda, baking powder, cinnamon, nutmeg, and salt.
3. In another bowl, beat eggs, maple syrup, pumpkin puree, applesauce, oil, and vanilla until combined.
4. Add dry ingredients to wet ingredients and stir until just mixed.
5. Pour batter into pan and bake for 50–60 minutes or until a toothpick inserted comes out clean.
6. Cool in pan 10 minutes before removing to a wire rack.
Notes
This bread is naturally sweetened and moist.
Store wrapped tightly at room temperature for up to 3 days or freeze.
