Description
This chocolate chip pumpkin bread is soft, rich, and loaded with fall flavors plus gooey chocolate chunks in every bite.
Ingredients
1 ¾ cups all-purpose flour
1 tsp baking soda
2 tsp cinnamon
¼ tsp nutmeg
¾ tsp salt
2 large eggs
1 cup granulated sugar
½ cup brown sugar
1 ½ cups canned pumpkin puree
½ cup vegetable oil
1 tsp vanilla extract
¾ cup semi-sweet chocolate chips (plus more for topping)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
3. In a large bowl, beat eggs, sugars, pumpkin puree, oil, and vanilla until smooth.
4. Add dry ingredients to wet ingredients and stir until just combined.
5. Fold in chocolate chips.
6. Pour batter into prepared pan and smooth the top. Sprinkle a few extra chocolate chips on top.
7. Bake for 55–65 minutes or until a toothpick inserted comes out mostly clean.
8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Try adding chopped walnuts or pecans for crunch. This bread stays moist for several days!
